Ingredients:
1 pound pasta (such as fusilli or rotini)
1/4 cup Olivo Amigo Extra-Virgin Olive Oil
3 tablespoons Olivo Amigo Spark Balsamic Vinegar
1 tablespoon Dijon mustard
2 garlic cloves, minced
Salt and pepper to taste
1 pint cherry tomatoes, halved
1/2 red onion, diced
1/2 cup pitted kalamata olives, halved
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
1/2 cup crumbled feta cheese (optional)
Instructions:
Cook the pasta according to package instructions until al dente.
Drain the pasta and rinse it under cold water to cool it down.
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper to make the dressing.
In a large bowl, toss the pasta with the cherry tomatoes, red onion, kalamata olives, parsley, and basil.
Pour the dressing over the pasta mixture and toss to coat.
Add the feta cheese (if using) and toss again.
Refrigerate for at least 1 hour before serving.
