Having a simple green go-to salad recipe is crucial for any cook! You can use it as a side salad for any meal or make it a main dish by adding some protein, grains or seeds. For this particular dish, we use some mixed greens and a little bit of radicchio (radish) for the crunch and color, but feel free to use any green that you have on hand.
1 1/2 tsp whole grain mustard
4 tbsp freshly squeezed lemon juice
1/2 cup Olivo Amigo Extra-Virgin Olive Oil
1 tsp honey
Salt and black pepper to taste
For the salad:
3 cups mixed greens
1 radicchio, cut into pieces
In a small mixing bowl, whisk together all the ingredients for the dressing except the olive oil.
While whisking, slowly drizzle the olive oil in until it is completely emulsified.
Place the greens and radicchio leaves in a serving bowl and toss with the dressing.
Reserve the remaining dressing for future salads.
