Sourdough Cottage Cheese Toast

A Quick and Easy High-Protein Breakfast

Breakfast is such a fun meal to get creative with! I love to experiment with different ingredients to create simple and nutritious creations. This recipe can be made in minutes, and is full of protein and healthy fats to keep you nourished for hours!

 

What you will need:

  • 2 slices Sourdough bread (or bread of choice)

  • 1 cup cottage cheese

  • 3 tbsp Vitality extra virgin olive oil; divided

  • 1 tbsp Everything but the Bagel seasoning

  • Fresh parsley for garnish (optional)

  • Sea salt and fresh cracked black pepper; to taste

Instructions:

  1. Over medium heat, warm 2 tbsp Vitality in a pan on the stovetop

  2. Once warm, add 2 slices of bread. Flip slices immediately to coat both sides in Vitality.

  3. When both sides of the bread are coated, allow each slice to crisp to desired doneness. Flip bread and repeat.

  4. Remove toast from pan and add to serving plate.

  5. Top each slice with ½ cup cottage cheese,½ tbsp Vitality, ½ tbsp Everything but the Bagel seasoning, sea salt & pepper to taste, and chopped fresh parsley(if using)

  6. Slice in half if desired and enjoy!


Pan toasting the bread in this way creates such a warm, crispy compliment to the cool, creamy cottage cheese on top! You can adjust this recipe by using your favorite bread and garnishing with any fresh herbs. This recipe is best enjoyed immediately, while the bread is warm and toasty.
