This shrimp ceviche recipe is perfect for a refreshing summer appetizer or light meal. It beautifully reflects all the flavors of the coast and is simple to make. 

 

Ingredients:

1 pound cooked or grilled shrimp, peeled and deveined

1/2 cup fresh lime juice

1/4 cup Olivo Amigo extra-virgin olive oil

1/2 red onion, diced

1 jalapeño pepper, seeded and diced

1/2 red bell pepper, diced

1/4 cup chopped fresh cilantro

Salt and pepper to taste

Instructions:

Cut the cooked or grilled shrimp into bite-size pieces and place them in a large bowl.

Pour the lime juice over the shrimp and toss gently to coat.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.

Add the diced red onion, jalapeño pepper, and red bell pepper to the bowl.

Drizzle the olive oil over the mixture and toss gently to combine.

Add the chopped cilantro and season with salt and pepper to taste.

Serve chilled and enjoy!
