Ingredients:
2 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
1 cup granulated sugar
2 tbsp lemon zest (about 2 lemons)
2 large eggs
1/2 cup Olivo Amigo extra-virgin olive oil
1/4 cup fresh lemon juice
1 tsp vanilla extract
1/2 cup powdered sugar, for dusting
Instructions:
Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a separate bowl, combine the sugar and lemon zest. Rub the mixture together with your fingers to release the lemon oil.
Add the eggs to the sugar mixture and whisk until light and frothy, about 2 minutes.
Gradually whisk in the olive oil, lemon juice, and vanilla extract.
Add the flour mixture to the egg mixture and stir until just combined.
Using a cookie scoop or spoon, drop the dough onto the prepared baking sheet, spacing the cookies about 2 inches apart.
Bake for 12-15 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Dust the cookies with powdered sugar before serving.
