These delicious cookies are perfect for Halloween and use our extra-virgin olive oil in place of butter for a healthier alternative.
1 cup sugar
1 teaspoon vanilla extract
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Halloween sprinkles or mini chocolate chips
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine olive oil, sugar, eggs, and vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, mixing until a dough forms (If the dough is too dry, add a bit more olive oil until you reach the right consistency).
Spoon out a clump of dough and roll in your hands to get a nice sphere shape.
Place the dough on the prepared baking sheet.
Bake for 8-10 minutes or until the edges are lightly golden.
Once the cookies have cooled, use Halloween sprinkles or mini chocolate chips to decorate the cookies. You can even get creative with some icing!
This olive oil cookie recipe is the perfect choice to create a healthier version of your standard Halloween cookies. They are fun to make with the whole family and everyone will be reaching for more!
