Ingredients:
2 oz gin
1 oz fresh lemon juice
1 oz simple syrup
1 egg white (optional; added for extra foam)
Soda water
Ice
Rosemary Sprig
Instructions:
In a cocktail shaker, add gin, balsamic vinegar, fresh lemon juice, simple syrup, and egg white (if you want extra foam).
Dry shake (without ice) vigorously for about 20 seconds to froth the egg white. Skip this step if you are omitting the egg white.
Add ice to the shaker and shake again for about 15 seconds to chill the drink.
Strain the cocktail into a glass of your choosing filled with ice.
Top off the glass with soda water.
Garnish with your rosemary sprig.
