Balsamic Chicken Skewers

Ingredients:

Olivo Amigo, yourolivoamigo, evoo, olive oil, vitality olive oil, spark balsamic vinegar, elevate mediterranean spice blend, chicken skewers, balsamic chicken

Instructions:

  1. In a mixing bowl, combine the Olivo Amigo Vitality Olive Oil, Olivo Amigo Spark balsamic vinegar, Olivo Amigo Elevate Mediterranean spices, salt, and pepper.
  2. Add the chicken cubes to the marinade and toss until they are well coated. Ensure all the chicken pieces are evenly covered.
  3. Cover the bowl with plastic wrap or place the mixture in a sealed container. Allow the chicken to marinate in the refrigerator for a minimum of 30 minutes, but preferably 4 hours. Marinating for a longer time will enhance the flavor.
  4. Preheat your grill or grill pan to medium heat.
  5. If using wooden skewers, make sure to soak them in water for about 20 minutes beforehand to prevent burning. If using metal skewers, no soaking is necessary.
  6. Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece.
  7. Place the skewers on the grill or grill pan, and cook over medium heat. Grill for about 6-8 minutes per side, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit (74 degrees Celsius).
  8. Occasionally brush the chicken skewers with any leftover marinade while grilling, to keep them moist and flavorful.
  9. Once cooked, remove the skewers from the grill and let them rest for a couple of minutes before serving.
  10. Serve the balsamic chicken skewers as a main dish or alongside your favorite sides.
