Balsamic Glazed Pork Tenderloin:


Ingredients:

1 (1-1.5 lb) pork tenderloin

Salt and freshly ground black pepper to taste

2 tablespoons of extra-virgin olive oil

1/2 cup of balsamic vinegar

1/2 cup of chicken or beef broth

2 tablespoons of brown sugar

2 cloves of garlic, minced

1 teaspoon of dried thyme


Instructions:

Preheat the oven to 400°F. Season the pork tenderloin with salt and pepper.

In a large oven-safe skillet, heat the olive oil over medium-high heat. Sear the pork tenderloin on all sides until browned, about 2-3 minutes per side.

In a small saucepan, combine the balsamic vinegar, broth, brown sugar, garlic, and thyme. Bring to a boil, then reduce the heat and let simmer until the sauce has reduced and thickened, about 10-15 minutes.

Brush the balsamic glaze all over the pork tenderloin and place the skillet in the oven. Bake for 20-25 minutes or until the internal temperature of the pork reaches 145°F.

Let the pork rest for 5 minutes before slicing and serving.


Balsamic Roasted Vegetables:


Ingredients:

2 lbs of mixed vegetables (such as cherry tomatoes, bell peppers, zucchini, and red onion)

2 tablespoons of extra-virgin olive oil

2 tablespoons of balsamic vinegar

Salt and freshly ground black pepper to taste

2 cloves of garlic, minced

1 teaspoon of dried basil


Instructions:

Preheat the oven to 400°F. Line a baking sheet with parchment paper.

Cut the vegetables into bite-sized pieces and place them in a large bowl.

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, pepper, garlic, and basil.

Pour the balsamic dressing over the vegetables and toss to coat evenly.

Spread the vegetables in a single layer on the prepared baking sheet and place in the oven. Roast for 20-25 minutes or until the vegetables are tender and slightly caramelized.

Balsamic Vinegar and Honey Glazed Chicken:


Ingredients:

4 boneless, skinless chicken breasts

Salt and freshly ground black pepper to taste

2 tablespoons of extra-virgin olive oil

1/4 cup of balsamic vinegar

2 tablespoons of honey

2 cloves of garlic, minced

1 teaspoon of dried rosemary


Instructions:

Season the chicken breasts with salt and pepper.

In a large skillet, heat the olive oil over medium-high heat. Sear the chicken breasts on both sides until browned, about 2-3 minutes per side.

In a small saucepan, combine the balsamic vinegar, honey, garlic, and rosemary. Bring to a boil, then reduce the heat and let simmer until the sauce has reduced and thickened, about 10-15 minutes.

Brush the balsamic and honey glaze all over the chicken breasts and continue cooking until the internal temperature of the chicken reaches 165°F, about 5-7 minutes.

Serve the chicken with the remaining balsamic and honey glaze spooned over the top.
